It's been far too long since I've posted. I know. I'm bad. But this flavor-layered, spicy-sweet-tangy & titillating BBQ sauce is amazingly good - so I'm hoping one balances the other out.
If you're like me - so anxious to prepare for the grilling season you've been cooking hot dogs over flaming trashcans while waiting for the bus - then this awe-inspiring sauce is an easy and ideal way to start getting your groove back.
Seriously simple - here's what you need:
1 cup ketchup
3/4 cup cherry preserves
3 tbs fresh lemon juice
2 tbs light molasses
2 tbs Worcestershire sauce
2 tbs soy sauce
2 tbs apple cider vinegar
1 tbs chipotle flakes
2 cans (or less, depending on your love of spice) chipotle chiles in adobo w sauce from can
2 tsp liquid smoke
3 tbs garlic powder
2 tsp unsweetened cocoa
Toss it all in a pan, set to high for one minute, stirring, then lower heat and let simmer for 10-15 minutes, stirring occasionally. THIS WILL BURN if you don't stir, so work those forearms, friends.
Obviously, you can do whatever you want with this sauce (I plan on grilling up some babybacks with this nectar-de-la-gods). This time though, I took a pound of ground pork, mixed in the sauce, a block of cheddar (about an inch square cut into small cubes), and grilled as patties - marinating just once or twice.
